Hot Cross Buns – Sugar-Free, Gluten-Free

Hot cross buns are my favourite festive food! These sugar-free, gluten-free muffiny delights hit the spicy goodness nail on the head. The ingredients are all so good for you too, so make at least double of this recipe! Happy Easter! x

½ cup coconut flour
¼ cup psyllium husk
1 tablespoon of arrowroot flour
1 tsp baking soda
1 tsp mixed spice
½ cup raisins
zest of 1 orange
juice of ½ orange
2 eggs
½ cup coconut oil, melted
¼ cup rice malt syrup

For the crosses, add water to ½ tablespoon of coconut flour until a paste forms.

Spoon the batter into a muffin tray lined with greaseproof paper and bake for 20 minutes at 180 degrees celsius. Add the crosses and bake for a further 5 minutes.
