Vital Veggie Tuna Fritters – Gluten, Dairy and Soy free!

The perfect healthy mid-week meal. A winner with the whole family – gluten free, dairy free and soy free! So quick and easy to make – its on our normal rotation of meals.

Ingredients:
425g tuna in springwater
2 tbsp Vital Veggie Power
2 cups The Wholefood Pantry White or Brown Basmati (cooked)
2 tbsp tamari
1 tbsp lime juice
2 free range eggs
1 tsp sesame oil
1 tbsp sesame seeds
6 tbsp The Wholefood Pantry Coconut Oil (for cooking)
1 tsp The Wholefood Pantry Himalayan Salt (to serve)

Method:
Combine all ingredients and mix well.
Add 2 tablespoons of coconut oil into a frying pan over medium heat.
Spoon tablespoons of your mix into the pan and fry on each side for about 3 mins – or until golden brown.
Add more coconut oil and finishing cooking the rest of your mix in batches.
Serve with whatever you have hanging around – salad, avocado & tomato – even a fried egg or 2.
